Apple-Raisin Bran Cake

1-1/2 Cups / 375 mL Unbleached or All-Purpose Flour
1-1/2 Cups / 375 mL Bran Flakes Cereal with Raisins
1 Cup / 250 mL Coarsely Chopped Peeled Apples
1/2 Cup / 125 mL Sugar
1 teas. / 5 mL Watkins Baking Powder
1/2 teas. / 2.5 mL Baking Soda
1/2 teas. / 2.5 mL Freshly Ground Watkins Sea Salt
1 Cup / 250 mL Buttermilk
1-1/2 teas. / 7.5 mL Watkins Original Double-Strength Vanilla Extract
1/4 Cup / 60 mL Butter or Margarine, melted
1 Egg, slightly beaten
1-1/2 Tbsp. / 25 mL Sugar
1/2 teas. / 2.5 mL Watkins Cinnamon
Watkins Cooking Spray

Heat oven to 400ºF / 205ºC. Spray bottom only of an 8-inch / 20-cm square or 9-inch / 23-cm round baking dish with Watkins Cooking Spray. Combine flour, cereal, apples, sugar, baking powder, soda and salt in large mixing bowl; mix lightly. Add buttermilk, vanilla, butter, and egg; stir just until ingredients are moistened. Spread batter into prepared pan. Combine sugar and cinnamon and sprinkle evenly over top. Bake for 25 to 30 minutes or until toothpick inserted toward center comes out clean. Best served warm. Makes 9 servings.
