Banana Coconut Muffins

1 2/3 Cups Flour
1/4 Cup Granulated Sugar
2 teas. Watkins Baking Powder
1/2 teas. Salt
1 Cup Coconut
1/2 Cup Raisins
2 Bananas, chopped
1 Egg
1/2 Cup Milk
1/4 teas. Watkins Banana Extract
1/4 teas. Watkins Coconut Extract
1/4 Cup Brown Sugar
3 Tbsp. Margarine or Butter, melted

Mix dry ingredients, including coconut and banana.  Beat egg, add milk, extracts and margarine. Add to dry ingredients, mix until moistened. Spoon into muffin pans.

Topping:
1/3 Cup Coconut
2 teas. Brown Sugar
2 Tbsp. Margarine
1/4 teas. Watkins Cinnamon

Mix and sprinkle over unbaked muffins. Bake at 375 for 25 minutes. Makes 12 muffins.
