Butterscotch Brownies

6 Tbsp. / 90 mL Margarine or Butter, softened
1-1/2 Cups / 375 mL Brown Sugar
3 Egg Whites, lightly beaten
2 teas. / 10 mL Watkins Butter Pecan Extract
2 Cups / 500 mL All-Purpose Flour
1 teas. / 5 mL Watkins Baking Powder
1/2 teas. / 2.5 mL Salt
1/4 teas. / 1.2 mL Baking Soda
1/2 Cup / 125 mL Butterscotch Chips
Watkins Cooking Spray

Preheat oven to 350ºF / 180ºC. Beat margarine and sugar until well mixed. Add egg whites and extract; mix well. Add the flour, baking powder, salt, and baking soda; beat until smooth. Stir in butterscotch chips. Spoon mixture into 13 x 9-inch / 33 x 23-cm baking dish coated with Watkins Cooking Spray. With knife or spatula, smooth out surface to make even. Bake for 25 to 30 minutes or until brownies test done. Remove from oven and let cool completely on wire rack. Makes 24 brownies, 1 per serving.
