Basil Chicken & Vegetable Medley

1 Tbsp. / 15 mL Watkins Original Grapeseed Oil
4 Skinless, Boneless Chicken Breast Halves (about 1 lb. / 454 g)
1 Medium Zucchini, cut into chunks
2 Medium Tomatoes, cut into chunks
2 Tbsp. / 30 mL White Wine Vinegar
2 Tbsp. / 15 mL Watkins Basil
2 teas. / 10 mL Watkins Garlic Granules
1/4 teas. / 1.2 mL Watkins Black pepper
Freshly-Ground Watkins Sea Salt, to taste

Hot cooked pasta In large skillet, heat grapeseed oil over medium-high heat until hot; add chicken breasts and brown on both sides. Reduce heat and continue to cook until chicken is done; remove from skillet and keep warm. Add zucchini, tomatoes, vinegar, basil, garlic granules, pepper and salt to skillet; stir-fry 3 to 5 minutes or until vegetables are crisp-tender. Return chicken to skillet and heat through. Serve over pasta. Makes 4 servings.
