Brown & Wild Rice Stuffed Chicken

1 1/4 Cups / 325 mL Watkins Brown & Wild Rice Medley cooked per package directions, adding 1 1/2 Tbsp. / 25 mL Watkins Chicken Soup Base to water.
1 Cup / 250 mL Soft Bread Crumbs
1/2 Cup / 125 mL Dark Raisins
1/2 Cup / 125 mL Finely Chopped Walnuts
1/2 Cup / 125 mL Diced, Peeled Apple
1/2 Cup / 125 mL Butter or Margarine, melted
2 teas. / 10 mL Watkins Poultry Seasoning
1/2 Cup / 125 mL Orange Juice
1 Whole Roasting Chicken (4 to 4 1/2 lbs. / 1.75 to 2 kg), rinsed and patted dry
1 1/2 Tbsp. / 25 mL Watkins Meat Magic
1 1/2 teas. / 7.5 mL Watkins Poultry Seasoning

Combine cooked rice and next seven ingredients; mix well. Stuff mixture loosely into cavity of chicken (place remaining rice mixture in small casserole to bake later). Rub chicken with Meat Magic and Poultry Seasoning. Place on oiled rack in roasting pan. Bake at 350*F / 180*C for 1 3/4 to 2 hours or until an internal temperature of 190*F / 90*C is reached. Cover chicken with foil if it starts to become too brown. Cover stuffing in casserole and place in oven the last 30 minutes of cooking time. To serve: Remove stuffing from chicken and combine with stuffing in casserole; toss to mix. Slice chicken and serve with stuffing. Makes 8 servings.
