6 Large Ripe Tomatoes
1/4 Cup Watkins Original Grapeseed Oil
Salt
Preheat the oven to 325 degrees. Slice the tomatoes in half cross-wise. Place the tomatoes on a baking sheet with cut side up. Pour the oil over the tomatoes. Sprinkle with salt as desired. Bake for about 2 hours until tomatoes are wrinkled on the outside but still somewhat moist in the center. Serve warm or cool.
If you don't use them right away you can store them in the refrigerator in some Grapeseed oil. This is a great idea when we have too many tomatoes and don't want them to spoil. You can serve these over chicken breast for a main course. They are also great in omelets or served warm with grilled bread and some basil leaves.
