1 Package (7 Oz. / 198 g) Watkins
Whole Wheat Pizza Crust Mix
2 Skinless, Boneless Chicken Breast Halves, cut into very thin
strips
1 1/2 Tbsp. / 25 ml Watkins Caribbean Spice Rub
1 Tbsp. / 15 ml Watkins Citrus-Cilantro
Grapeseed Oil
1 Cup / 250 ml Sliced Shiitake Mushrooms
1/2 Cup / 125 ml Sliced Onion
1/3 Cup / 80 ml Tomato Sauce
3 Tbsp. / 45 ml Watkins Tropical Salsa
1/2 Cup / 125 ml Shredded Mozzarella Cheese
1/2 Cup / 125 ml Shredded Provolone or Smoked Mozzarella Cheese
Prepare pizza crust dough according to package directions. Meanwhile, toss chicken strips with spice rub; saute in grapeseed oil until done. Remove chicken from pan and saute mushrooms for 1 minute in pan drippings; set aside. Combine tomato sauce and Tropical Salsa. Spread this mixture on top of prepared dough. Top with chicken and mushrooms, onion and cheeses. Bake at 450 degrees F / 235 degres C for 12 to 14 minutes or until crust and cheese are golden brown. Makes 6 servings.
