Citrus-Ginger Chicken

1/4 Cup Low-Sugar Orange Marmalade
1 Tbsp. Honey Mustard
3/4 teas. Watkins Ground Ginger
1/8 teas. Watkins Cayenne Pepper
4 (4 oz.) Skinned Chicken Breast Halves
Watkins Cooking Spray
2 Cups Cooked Couscous (cooked without fat or salt)
Orange Sauce (recipe follows)
Watkins Orange Peel

Combine first 4 ingredients in a small bowl, stirring with a wire whisk to blend. Brush half of mixture over chicken. Reserve remaining half. Coat a grill rack with cooking spray; place on grill over medium-hot coals (350-400). Place chicken on rack; grill, covered, 10 minutes on each side or until chicken is done, basting occasionally with reserved marmalade mixture. Place couscous on a serving platter. Arrange chicken over couscous; drizzle Orange Sauce over chicken. Sprinkle with Grated Orange Peel, if desired. Yield: 4 servings.

Orange Sauce:
1/4 Cup Watkins Original Grapeseed Oil
1/2 teas. Watkins Grated Orange Peel
1/2 teas. Watkins Ground Ginger
Combine all ingredients, stirring well. Yield: 1/4 cup.
