Bread:
1 Cup / 250 mL Brewed Watkins Chai
¾ Cup / 180 mL Raisins
¾ Cup / 180 mL Craisins (dried sweetened cranberries)
1 Cup / 250 mL Sugar
1 Egg
¼ Cup / 60 mL Watkins Original Grapeseed Oil
2 Cups / 500 mL Flour
1 teas. / 5 mL Watkins Baking Powder
¼ teas. / 1.2 mL Baking Soda
½ teas. / 2.5 mL Salt
Watkins Cooking Spray
Honey-Lemon Butter:
½ Cup / 125 mL Softened Butter
2 teas. / 10 mL Honey
½ teas. / 2.5 mL Watkins Lemon Peel
Bread:
The night before: put brewed Chai in a large bowl along with
dried fruits and sugar. Let stand covered overnight. The next
morning: Beat egg and grapeseed oil together and stir into
Chai/fruit mixture. Combine remaining ingredients. Add to fruit
batter; stir until blended. Spoon into a loaf pan coated with Watkins
Cooking Spray. Bake at 350ºF / 180ºC for 50 to 60 minutes.
Honey-Lemon Butter:
Whip together ingredients for Honey-Lemon butter. When loaf
is done, turn out, slice and serve hot with Honey-Lemon Butter
