Cardamon Lemon Muffins

2 1/2 Cups Oat Bran
2 Cups All-Purpose Flour
2 teas. Watkins Baking Powder
1 1/2 teas. Baking Soda
1 teas. Ground Cardamom
2 Cups Unsweetened Applesauce
4 Large Egg Whites
1/2 Cup Pineapple Juice
1/2 Cup Honey
2 Tbsp. Watkins Original Grapeseed Oil
1/2 teas. Watkins Almond Extract
1 teas. Watkins Lemon Peel

Preheat oven to 400 F. Spray two 12-chamber muffin tins with Watkins Cooking Spray. Set aside. Combine oat bran, baking powder, baking soda, and cardamom. Mix well. In a large bowl, combine remaining ingredients and mix well. Add dry ingredients to wet ingredients. Stir until just moistened (batter will be lumpy), Fill muffin cups almost full. Place in oven and reduce heat to 375 F. Bake for 18 to 20 minutes. Serves 24.

Per serving (1 muffin): 108 calories, 2 grams of fat, 23 grams carbohydrate, 95 mg sodium
