Cheddar Potatoes

6-9 Potatoes, diced or one Bag Frozen Diced Potatoes
1/4 Cup Melted Butter
1 Cup Prepared Watkins Cream Soup
1/4 Cup Onions or can use Watkins Onion Flakes reconstituted to equal 1/4 Cup
1 Pint Sour Cream
1 1/2 Cups Shredded Cheddar Cheese

Mix together butter, cream soup, onion and sour cream until well blended. Stir in 1 cup of the cheddar cheese. Add potatoes stirring till coated. Spread into a baking dish(s) and top with remaining cheddar cheese. Bake at 350* F till done 30-40 minutes generally. You can also bake this with other things like your turkey cooking at a lower temp just watch them and when they are done take them out. Also have cooked them at higher temps and then cover with foil so they don't brown too much. This is a very versatile recipe and you can add chunked chicken, ham, turkey, cooked ground meat ect. to it and serve it as a casserole too.
