Fresh Apple Bundt Cake

Watkins Cooking Spray
2 1/2 Cups All-Purpose Flour
1 Tbsp Watkins Baking Powder
1/2 teas. Watkins Nutmeg
1/2 teas. Baking Soda
1 Cup White Sugar
1/2 Cup Butter, softened
1/4 Cup Buttermilk
2 teas. Watkins Vanilla Extract
1/2 teas. Watkins Lemon Extract
1 Cup Egg Substitute, thawed if frozen
2 Medium Golden Delicious Apples, peeled, cored and diced (about 2 cups)
Powdered Sugar, for dusting

Spray a 10-inch bundt / tube pan with the cooking spray; dust with a little flour, then tap out excess. Combine the flour, baking powder, nutmeg, and soda; set aside.In large bowl, combine the sugar, butter, buttermilk, vanilla and lemon extracts;beat until pale and creamy (about 4 minutes). Alternately add flour mixture and egg substitute beat until well blended and fluffy. By hand, stir in apples; spread in prepared pan. Bake at 350 degrees F for 50 to 60 minutes (50 minutes was in my oven) oruntil golden brown and cake tests done. Cool in pan on wire rack 10 minutes. Turn out of pan onto and cool completely. Dust with powdered sugar.
