Watkins Salsa is the base for the spicy dressing in this heart Mexican-style salad.
8 Oz. / 227 g Skinless, Boneless
Chicken Breasts, cubed
4 teas. / 20 ml Watkins Fiesta Seasoning,
divided
3/4 Cup / 180 ml Watkins JR's Thick & chunky
Salsa
1 Tbsp. / 15 ml Honey
1 Can (10 Oz. / 454 g) Whole Kernel Corn, drained
1 Can (15 Oz. / 425 g) Black Beans or Kidney Beans, drained and
rinsed
1 Cup / 250 ml Chopped Onion
1 Large Tomato, Cubed
2 Cups / 500 ml Finely-Shredded Lettuce
Sprinkle chicken with 2 teas. / 10 ml Fiesta Seasoning and freshly ground, Watkins Sea Salt (to taste). Coat a large non-stick skillet with Watkins Cooking Spray; place over medium heat. Add chicken and cook, turning the pieces frequently, until browned and cooked through. In large bowl, stir together salsa, honey and remaining Fiesta Seasoning. Add chicken, corn, beans, tomatoes and lettuce; mix lightly. (Makes 4 servings).
