Ingredients:
1 Cup Water
1/4 Cup Watkins Original Grapeseed Oil
4 Eggs
1 Cup Coconut
1 Package (2 layer size) White Cake Mix
2 Cups Prepared Watkins Vanilla Dessert Mix
(Pudding)
1/3 Cup Watkins Fruit Punch Concentrate,
undiluted
Frosting:
1 (3 oz.) Package Cream Cheese
2 1/2 Cups Sifted Confectioner's Sugar
1 Tbsp. Crushed Pineapple, well drained
Combine cake mix, instant pudding mix, water, Fruit Punch concentrate, eggs, and oil in large mixer bowl. Blend; beat at medium speed for 4 min. Stir in coconut. Pour into greased and floured 10 inch tube pan and bake at 325 degrees for 1 hour. Cool completely before frosting.
Frosting: Combine 3 oz. package of cream cheese with confectioner's sugar and pineapple; blend well until smooth and creamy. Spread over top and sides of cake.
