This recipe only has 398
calories and 5 grams of fat! Just one muffin
(the recipe makes 6) is a complete breakfast!
1 Cup Whole Wheat Flour
1 Cup All-Purpose Flour
3/4 Cup Sugar
2 teas. Watkins Baking Powder
2 tsp Watkins Cinnamon
1/2 teas. Baking Soda
2 Cups Finely Shredded Carrot
1 Medium Apple, peeled and shredded
1/2 Cup Raisins
1/4 Cup Chopped Walnuts
1/4 Cup Flaked Coconut
6 Egg Whites, beaten
1/2 Cup Buttermilk
1/3 Cup Unsweetened Applesauce
2 teas.Watkins Vanilla Extract
Preheat oven to 350. Coat 6
large (3") muffin cups with Watkins Cooking
Spray.
In a large bowl, stir together the whole-wheat flour, all-purpose
flour, sugar, baking powder, cinnamon, and baking soda. Stir in
the carrots, apple, raisins, walnuts, and coconut.
In a separate bowl, stir together the egg whites, buttermilk, applesauce, and vanilla. Add the liquid ingredients all at once to the flour mixture and stir until just moistened. Gently spoon the batter into the muffin cups until each is nearly full.
Bake about 30 minutes, or until a toothpick inserted in the middle comes out clean (mine took 40 minutes). Cool in the pan 5 minutes, then remove and let cool on a wire rack.
