Grilled Chicken Vegetable Fajitas

1/4 Cup / 60 mL Water
2 teas. / 10 mL Watkins Lime Extract
2 Tbsp. / 30 mL Watkins Fajita Seasoning
4 oz. / 113 g Skinless Boneless Chicken Breast Halves
2 Red Bell Peppers, quartered
2 Zucchini, cut in half lengthwise and crosswise
2 Medium Onions cut into thick slices
8 (8-inch / 20-cm) Soft Flour Tortillas
Watkins Cooking Spray

Combine water, Lime Extract and Fajita Seasoning. Brush mixture over chicken, peppers, zucchini and onion. Let stand 10 minutes to marinate. Meanwhile, coat cold grill rack with Watkins Cooking Spray. Begin to heat grill. When ready to grill, place chicken, and vegetables over medium heat 6 inches / 15 cm from coals. Cook 8 to 10 minutes or until vegetables are tender and chicken is done brushing with any remaining marinade. Slice chicken and vegetables into strips and place in center of tortillas; then roll up to eat. If desired, serve with Watkins JR’s Thick and Chunky Salsa. Makes 8 fajitas.
