Golden Oldies

2 Medium Onions, chopped
1 teas. Watkins Original Grapeseed Oil
1 Cup Baby Carrots
2 Medium Sweet Potatoes, skinned and cubed
1/2 Cup Water
1 Tbsp. Brown Sugar

Preheat oven to 400*F.  Using a 1 quart casserole dish that is safe for the top of the stove, sauté onion in oil until transparent. Add carrots and potatoes, add water, and sprinkle with brown sugar. Cover with the casserole lid or with foil. Bake for 30 minutes, until veggies are tender.
