Irish Apple Coffee Cake

1 Cup Watkins Original Grapeseed Oil
2 Large Eggs
2 1/2 Cup Flour
1 teas. Watkins Cinnamon
1 Cup Chopped Nuts
2 Cups Sugar
1 teas. Watkins Vanilla Extract
2 teas. Watkins Baking Powder
1 teas. Salt
4 Cups Diced Apples
1 (6 Oz.) Package Butterscotch Bits

Cream oil, sugar, eggs and vanilla together until fluffy. Combine with dry ingredients and mix well. Add nuts and apples and spread in a 9x13 inch pan that has been lightly greased on bottom only. Sprinkle butterscotch chips on top and bake 50-60 minutes in a 350° oven.
