Lemon Crisp Cookies

2/3 Cup Butter
1/2 Cup Packed Brown Sugar
1 teas. Watkins Lemon Extract
2/3 Cup Flour
1 1/2 Cups Quick Oats

Preheat oven to 325 degrees. Cream butter and brown sugar. Add lemon extract, flour and oats. Mix until well blended. Form dough into small balls and place on cookie sheet. Flatten balls with fork. Bake 13-15 minutes or until light golden brown.
