Low-Fat Banana Muffins

1/2 Cup Nonfat Plain Yogurt
2 Ripe Bananas
2 Tbsp. Water
2 teas. Watkins Vanilla Extract
1/2 Cup Brown Sugar
2 Tbsp. Soy Flour
4 teas. Watkins Baking Powder
1/2 Cup Oat Bran
1/2 Cup Raisins
1 Cup Flour
1/2 Cup White Wheat Flour*
1/2 Cup Wheat Flour
1 Cup Milk

Mash bananas with yogurt and brown sugar. Add water, vanilla, soy flour, baking powder, and oat bran. Mix in raisins. Alternately add flour and milk. Stir until all ingredients are moistened. Divide among 12 greased muffin tins. Bake at 400° for 25 minutes.

*White Wheat Flour is a "lighter" whole wheat flour from King Arthur. If you can't find it, just use all-purpose flour instead. Your muffins won't have as much fiber.
