Mediterranean Bread Salad

2 Medium Tomatoes, cut into small wedges
1 Large Cucumber, halved lengthwise and thinly sliced
2 Green Bell Peppers, cut into 1/2-inch / 1-cm cubes
1 Small Onion, sliced crosswise and separated into rings
4 Slices Day-Old Crusty Country or Italian Bread, toasted and cut into cubes
1/3 Cup / 80 mL Lemon Juice
1 Tbsp. / 15 mL Watkins Garlic & Parsley Grapeseed Oil
1-1/2 teas. / 7.5 mL Watkins Oregano
1-1/2 teas. / 7.5 mL Watkins Garlic & Spice Salad Dressing Blend
2 Tbsp. / 30 mL Crumbled Feta Cheese

In large bowl, combine the tomatoes, cucumber, peppers, onions and bread. In small bowl, combine lemon juice, oil, oregano and Salad Dressing Blend; mix well. Pour over salad and toss lightly to mix. Divide among individual salad plates and sprinkle with feta. Serve immediately. Makes 4 servings.
