Maine Potato Cake

1 Cup Butter - softened
2 Cups Sugar
2 Eggs
1 Cup Cold Mashed Potatoes
1 teas. Watkins Vanilla Extract
2 Cups Flour
1/4 Cup Watkins Baking Cocoa
1/4 teas. Baking Soda
1 Cup Milk
1 Cup Chopped Walnuts

Preheat oven to 350 degrees. Spray a 13 x 9 x 2" baking pan with Watkins Cooking Spray. Cream butter and sugar until fluffy. Add eggs, 1 at a time, beating well after each addition. Blend in mashed potatoes and vanilla. Combine flour, cocoa and baking soda. Add to creamed mixture alternately with milk, blending well after each addition. Stir in walnuts. Pour batter into prepared pan. Bake for 45 minutes or until cake tests done. Cool on a wire rack. Frost or ice if desired. Serves 12.
