Pastry Pie Shell
3 Egg Whites, lightly beaten
1 Egg, lightly beaten
1/2 Cup / 125 mL Sugar
2-1/2 teas. / 40 mL Watkins Original
Double-Strength Vanilla Extract
1/8 teas. / 0.6 mL Salt
2 Cups / 500 mL Skim Milk
1/4 teas. / 1.2 mL Watkins Nutmeg
Preheat oven to 400ºF / 205ºC. Flute edges of pie shell and prick generously. Bake for 10 minutes. While crust is baking, combine egg whites, egg, sugar, vanilla, and salt; mix well with wire whisk. Gradually stir in milk. When crust is done, pull out oven rack halfway and fill with custard mixture. Sprinkle Nutmeg evenly over top. Reduce oven temperature to 325ºF / 165ºC and bake for 35 to 40 minutes or until knife inserted toward center comes out clean. Cool to room temperature and refrigerate until serving time. Makes 8 servings.
