2 Medium Zucchini or Yellow
Summer Squash
2 Red, Yellow or Green Bell Peppers
1 lb. / 454 g Turkey Tenderloin
1 Tbsp. / 15 mL Watkins Onion Liquid Spice
1 teas. / 5 mL Watkins Mediterranean Herb Rub
Freshly-Ground Watkins Sea Salt, to taste
2 Tbsp. / 30 mL All-Fruit Orange Marmalade
Preheat broiler. Cut zucchini and peppers lengthwise into long
wedges; place on broiler pan. Cut tenderloin into pieces about
1/2 inch / 1 cm thick. Place on broiler pan. Brush all with
liquid spice. Sprinkle herb rub and salt over vegetables. Broil
about 5 inches/12 cm from heat source for 5 to 8 minutes,
watching carefully to prevent scorching. In small saucepan melt
marmalade. Turn turkey and vegetables; brush turkey lightly with
marmalade mixture. Broil for 2 minutes; turn turkey again and
brush with marmalade mixture. Broil 2 minutes more or until
cooked through. Makes 4 servings.
