1 1/2 Cups Sifted All-Purpose
Flour
1/2 Cup White Sugar
2 teas. Watkins Baking Powder
1/2 teas. Watkins Ginger
1/2 teas. Salt
2 Eggs, Beaten
2 Tbsp. Milk
1/4 cup Butter, melted
1 teas. Watkins Vanilla Extract
1 Can (16 oz.) Peach Halves, drained and thinly sliced
1/4 Cup Brown Sugar
3/4 teas. Watkins Cinnamon
Peach Preserves
Sweetened Whipped Topping flavored with Watkins
Vanilla Extract
In medium bowl combine flour, white sugar, baking powder, ginger, and salt; set aside. In large bowl beat eggs and milk until well mixed. Add flour mixture, butter, and vanilla extract, mixing with fork until smooth. Do not overmix (dough will be stiff). Spray a 9 inch round springform pan with Watkins Cooking Spray. Turn batter into pan, spread evenly over bottom of pan. Arrange peach slices on top in an attractive manner. Combine brown sugar and cinnamon and sprinkle over top of peaches. Bake at 350*F for 30 to 35 minutes or until cake tests done. Remove from oven. Brush peach preserves over top of cake. Cool 10 minutes on rack. Gently remove rim of pan. Serve warm with whipped topping. Makes 10 servings.
