Cook together unpeeled potatoes and a couple of eggs. Cool. Cube potatoes (unpeeled) and chop eggs. Add 3 or 4 sliced green onions, 2 finely chopped or sliced celery ribs, a small can of sliced black olives, 1/4 Cup Light Mayonnaise, and 2 or 3 Tablespoons of Watkins Jalapeno Mustard. This recipe has converted non-potato salad eaters to potato salad lovers! The secret ingredient is the Jalapeno Mustard!
