Pineapple Pie

Though no sugar is added, Watkins Vanilla Dessert Mix does contain a small amount of dextrose, so if you’re on a very restricted diet, you may want to check with your family doctor before using.

1 Cup / 250 mL Crushed Graham Cracker Crumbs
1/4 Cup / 60 mL Margarine or Butter, melted
1/4 Cup / 60 mL Watkins Vanilla Dessert Mix
1/4 Cup / 60 mL Water
3/4 Cup / 180 mL Skim Milk
1 Cup / 250 mL Fat-Free Sour Cream
1 Can (20 oz. / 567 g) Crushed Pineapple in Natural Juices, well-drained
Sugar Substitute equal to 3 Tbsp. / 45 mL Sugar

Combine graham cracker crumbs and margarine; press into bottom and up sides of a 9-inch / 23-cm pie plate. Bake at 350ºF / 180ºC for 8 to 10 minutes; cool. In medium saucepan, combine dessert mix, water, and skim milk. Cook over medium heat, stirring constantly, until mixture begins to boil and thicken. Remove from heat and allow to cool, stirring occasionally. Stir in sour cream, pineapple, and sugar substitute; mix well. Spoon in crust. Chill at least 3 hours. Makes 10 servings.
