Pumpkin Rolls
3 Eggs
1/2 teas. Baking Soda
1/2 teas. Watkins Pumpkin Pie Spice
1/2 teas. Watkins Cinnamon
2/3 Cup Pumpkin
1 Cup Sugar
3/4 Cups Flour
Spray a jelly roll pan with Watkins Cooking Spray; place a piece of wax paper over the pan and spray wax paper making sure to get corners well. Mix all ingredients together until well blended. Pour onto wax paper lined pan. Bake at 325 degrees for 13 minutes. When done flip on to a clean dishcloth sprinkled with powdered sugar. Roll up in a towel short side first and let cool completely in dishtowel.
Filling:
1/2 Cup Powdered Sugar
2 Tbsp. Butter
1 teas. Watkins Vanilla
1 8 Oz. Cream Cheese
Mix all ingredients together until fluffy. Unroll cooked pumpkin roll and spread filling over entire thing. Re-roll without dishtowel and sprinkle with powdered sugar. Serves 15 to 20 and freezes well.
