1 Envelope Unflavored Gelatin
1/2 Cup / 125 mL Skim Milk
4 Cups / 1 liter Fresh Strawberries (reserve four for garnish)
1 teas. / 5 mL Watkins Strawberry-Kiwi Punch
Concentrate
1/2 Cup / 125 mL Nonfat Sour Cream
Sugar Substitute equal to 1/4 cup / 60 mL Sugar (more or less to
taste)
4 Tbsp. / 60 mL Reduced-Calorie Whipped Topping
Sprinkle gelatin over milk in small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin is dissolved; remove from heat. Place strawberries and beverage concentrate in blender or food processor container; cover and process until smooth. Add gelatin mixture and process until smooth. Add sour cream and sugar substitute; cover and process until blended. Spoon mixture into four dessert dishes. Cover and chill until set. Top each parfait with 1 Tbsp. / 15 mL whipped topping and garnish with reserved strawberries. Makes 4 servings.
