Salade Niçoise Louis

4 New Potatoes (2 inches / 5 cm diameter)
1 Head Boston Lettuce, torn (about 4 Cups / 1 L)
4 Cups / 1 L Loosely-Packed Torn Fresh Spinach
1/2 Medium Red Onion, halved, thinly sliced
2 (6-oz. / 170-g) Cans Water-Packed White Tuna, drained, flaked
1/3 Cup / 80 mL Sliced Celery
1 (2.25-oz. / 64-g) Can Sliced Ripe Olives, drained
To taste, Coarsely-Ground Watkins Black Tellicherry Peppercorns
3/4 Cup / 180 mL Hot & Spicy Thousand-Island Dressing (See recipe under "Dressings")

Scrub potatoes; pierce with fork. Arrange on paper towel in microwave. Microwave on HIGH for 3 to 5 minutes or until very tender. Cool under cold running water. Halve potatoes and slice.

In large bowl, combine lettuce, spinach and onion; toss gently. Divide evenly onto 4 plates. Arrange potato slices, tuna, celery and olives over lettuce mixture. Sprinkle each serving with pepper; serve with dressing. Makes 4 servings.
