South-of-the-Border Chicken

1/4 Cup / 60 mL Orange Juice
1 1/2 teas. / 7.5 mL Watkins Chili Seasoning
1/2 teas. / 2.5 mL Watkins Cumin
4 Skinless, Boneless Chicken Breast Halves (about 1 lb. / 454 g)
1 Package (8 oz. / 225 g) Watkins Rice & Red Bean Blend
Watkins Jr’s Thick and Chunky Salsa, to taste

Combine orange juice, chili seasoning and cumin; mix well. Add chicken breasts; turn to coat well. Refrigerate and marinate at least 15 minutes or longer. Cook rice & bean blend according to package directions. Heat grill; grill chicken 5 to 7 minutes per side until done. Thinly slice chicken and place on top of cooked rice and beans. Top with salsa. Makes 4 servings.
