Spicy Caramel Apples

6 Medium Apples
6 Wooden Popsicle Sticks
1 Bag (14 Oz.) Vanilla Caramels (remove wrappers)
2 Tbsp. Water
1/2 teas. Watkins Vanilla Extract
1/8 teas. Watkins Cinnamon
Small pinch of Watkins Allspice
Waxed Paper

Rinse apples with water; dry. Push a wooden popsicle stick into stem end of each apple; set aside. Place caramels, water, Vanilla Extract, Cinnamon and Allspice in large microwave-safe bowl. Microwave (HIGH), uncovered for 2 1/2 minutes stirring often after 1 minutes, until caramels are melted and mixture is smooth. Dip one apple at a time into caramel mixture and turn until apple is completely coated. Allow excess to drip off apple. Place on a waxed paper-lined plate. (if caramel mixture becomes too stiff to coat apples, return to microwave and heat for a few seconds until smooth again.) Refrigerate apples until coating is firm. Makes 6 apples.

(To make the caramel sauce on the stovetop, melt ingredients in top of double boiler until smooth, stirring frequently)
