Sweet Potato Souffle

3 Cups Mashed Yams (or Sweet Potatoes) - you can either bake or microwave them.
1/2 to1 Cup White Sugar (Note: For every 6 cups of yams, use only 1/3 cup of sugar)
2 Eggs, beaten
1/2 Cup Milk
1 teas. Watkins Double-Strength Vanilla Extract
1/2 teas. Salt

Mix together all of the above ingredients. Place in a greased 1 1/2 quart casserole; set aside.

Topping:
1 Cup Chopped Pecans
1/2 to 1 Cup Brown Sugar
1/2 Cup All-Purpose Flour
1/4 Cup Butter, softened
1 1/2 teas. Watkins Nutmeg
1/2 teas. Watkins Caramel Extract

Mix together all of the topping ingredients, toss with a fork. Sprinkle topping over the sweet potatoes. Bake at 400 F for 30 minutes.

NOTE: you can make the casserole and the topping a day ahead and store in the fridge. Then take out, put on the topping and bake.
