Sweet & Spicy Gingerbread

1-1/4 Cups / 325 mL All-Purpose Flour
1/4 Cup / 60 mL Whole Wheat Flour
1/4 Cup / 60 mL Brown Sugar
1 teas. / 5 mL Baking Soda
1/2 teas. / 2.5 mL Watkins Baking Powder
1 teas. / 5 mL Watkins Ginger
1 teas. / 5 mL Watkins Cinnamon
1/8 teas. / 0.6 mL Watkins Ground Cloves
2 Egg Whites, lightly beaten
1/2 Cup / 125 mL Low-Fat Buttermilk
1/2 Cup / 125 mL Unsweetened Applesauce
1/2 Cup / 125 mL Molasses
1 teas. / 5 mL Watkins Original Double-Strength Vanilla Extract

Lightly spray an 8-inch / 20-cm square baking dish with Watkins Cooking Spray; set aside. Preheat oven to 350ºF / 180ºC. Combine flours, brown sugar, baking soda, baking powder and spices in large bowl. In small bowl, combine remaining ingredients. Add to flour mixture and beat with an electric mixer until well combined. Pour batter into pan. Bake for 30 to 35 minutes or until cake tests done. Cool on a wire rack for 10 minutes. Remove from pan and serve warm. Makes 9 servings.
