Sweet Potato Pie

1 Baked 9 " Pie Shell
4 Medium-Size Sweet Potatoes, boiled and mashed
4 Egg Yolks
2 Cups Sugar
1 teas. Watkins Cinnamon
½ Cup Vegetable Shortening

Topping:
¼ to ½ Cup Butter-Flavored Shortening
1 Cup Confectioners' Sugar
1 teas. Watkins Vanilla Extract
Pinch of Watkins Baking Powder

Preheat oven to 350 degrees F. Combine potatoes, egg yolks, sugar, and cinnamon and blend with a mixer. Blend in shortening. Pour into baked pie shell. Bake 15 to 20 minutes. Prepare topping: Blend shortening, sugar, and vanilla with mixer until fluffy. Blend in baking powder (this keeps the topping in peaks). Arrange over top of warm pie. Bake in 350 degree F oven until browned.
