Tex-Mex Wrap

1 Package Watkins Rice & Red Bean Blend
3 Tbsp. / 45 ml Watkins Fiesta Seasoning, divided
3 Skinless, Boneless Chicken Breast Halves (about 12 Oz. / 340 g)
1 Medium Green or Red Bell Pepper
1 Small Onion
Freshly Ground Watkins Sea Salt, to taste
1 Tbsp. / 15 ml Watkins Citrus-Cilantro Grapeseed Oil
6 Large 10 to 12 inch / 25 to 30 cm Flour Tortillas
JR's Thick & Chunky Salsa

Cook rice & red beans according to package directions, adding 1 1/2 Tbsp. / 25 ml Fiesta Seasoning to cooking water.  Meanwhile, cut chicken, pepper and onion into thin strips.  Toss with remaining 1 1/2 Tbsp. / 25 ml fiesta seasoning.  Heat grapeseed oil in large skillet.  Saute chicken, onions, and pepper in hot oil until chicken is done; salt to taste.  Place cooked rice and beans on bottom center of tortilla; place chicken and vegetables on top center.  Roll up tightly. Serve warm with salsa.  Makes 6 servings.
