Vegetable Stir-Fry Sandwich

1 Small Zucchini, sliced
1 Red Pepper, sliced
1 Medium Onion, sliced
1/2 tsp. Watkins Parsley
1/4 tsp. Watkins Thyme
1/8 tsp Salt (optional)
Dash of Watkins Black Pepper
2 Whole-Wheat Pita Breads
1/2 Cup Light Cream Cheese

Spray a skillet with Watkins Cooking Spray. Add vegetables and seasonings. Stir-fry until vegetables are cooked to your liking. Cut Pita bread in half and microwave on high for 20 seconds or until warm. Spread 2 tablespoons of cream cheese in each pita bread half. Fill with stir-fried vegetables. Serves 4.

Per Serving: 190 calories, 26 grams of carbohydrate, and 6 grams of fat. Use Fat-Free Cream Cheese and cut the fat even more.

This sandwich is a good choice for lunch or for a light supper. Feel free to vary the vegetables to whatever is in season.
