Western Slope Peach Pie

1 9 Inch Pastry Shell
3/4 Cup Sugar or Sugar Twin (spoonable)
2 Tbsp. All-Purpose Flour
1 teas. Watkins Cinnamon
Pinch of Salt
6-8 Medium Peaches, peeled, pitted and thinly sliced

Combine sugar, flour, cinnamon and salt. Gentle toss peaches with mixture and put into unbaked pastry shell.

Topping:
1/2 Cup All-Purpose Flour
1/4 Cup Sugar or Sugar Twin (spoonable)
3/4 Cup Finely Shredded Low-Fat Mild Cheddar Cheese
4 Tbsp. Butter, melted

In medium bowl, combine all topping ingredients and mix well. Sprinkle topping mixture over peaches. Bake at 400 degrees for 40 minutes or until brown. Serve warm. Serve 6-8.
