Yammy Biscuits

1 Large Yam
2 Cups Flour
1 Tbsp. Watkins Baking Powder
1/2 teas. Watkins Sea Salt
1/4 Cup Butter or Margarine
1 Tbsp. Watkins Orange Peel
1 teas. Watkins Cinnamon
1/3 Cup Honey

1/2 cup milk Bake the yam in a 450-degree oven until tender. Peel, mash and set aside. (You can microwave as a baked potato until tender also-prick holes in skin before cooking) In a large bowl, combine the flour, Watkins Baking Powder and Watkins Sea Salt. Cut in the butter or margarine until it resembles large crumbs. Add Watkins Orange Peel, the mashed yam, Watkins Cinnamon and honey and mix well. Add enough milk to make a soft but not sticky dough. Turn out the dough onto a lightly floured surface and knead three or four times. Pat the dough to 1-inch thickness and cut into 2-1/2 inch rounds, using a biscuit cutter or the bottom of a juice glass. Place on an ungreased baking sheet and bake in a 400-degree oven 15 to 18 minutes, until lightly browned. Makes 10 biscuits.
